How we approach a guest space

We start with the building and its history.

On hotel and restaurant projects we choose the furniture only once we know the building. Brasserie le Paris sits in the Maison de France on Kurfürstendamm, next door to the Cinema Paris and the Institut Français. For the design we travelled to Northern France to experience real brasseries.

That became bordeaux, petrol and aubergine, velvet and brass, ZAHNA porcelain stoneware, countertops based on historical models and bespoke lighting by Marie Martin. For the hotel lobby we took a different route, with green, gold and a wall of living plants. Both started with the question of how a guest should feel there.

What we take on for hotels and restaurants

From concept to handover.

A dining room has to work on a full evening and still look good after years of heavy use. We plan for both from the start.

i.

Concept and atmosphere

Research into the building and its guests, then colour, material and light. From that we develop a design that suits your business and does not look dated after a year.

ii.

Bespoke pieces for the dining room

We draw banquettes, bars, countertops and lights ourselves and have them made by workshops we work with. That way furniture and architecture meet to the centimetre.

iii.

Permits and site management

If the use changes or load-bearing parts are affected, a permit procedure is usually required. In Berlin we file the application ourselves. On site we run the tender, trades, schedule and budget through to handover.

Construction management in Berlin
In the dining room

Six points
we pay particular attention to.

Guests remember how comfortable they were and what the light was like far more than any particular material.

  • i.

    The first impression

The entrance should let people arrive without rushing. In the hotel lobby a patterned upholstered bench stands on the way to check-in.

  • ii.

    Light in pools

Gold floor lamps, pendants with visible filaments, wall lights at the banquettes. Light in a dining room can be warm and focused; it does not have to be even.

  • iii.

    Seating for busy evenings

Velvet banquettes and upholstery should be beautiful and survive a full evening. We set covers, seat heights and depths for daily service.

  • iv.

    Surfaces for many hands

Porcelain stoneware, brass and hand-finished bars develop a patina over time and do not look worn even after years.

  • v.

    Routes for service and deliveries

Service, cloakroom, toilets, deliveries: a dining room has to work on a full evening. We settle these routes in the floor plan before we talk about fabrics.

  • vi.

One team for design and build

Architecture, interior design and site management work together with us, so that what was designed is what gets built.

FAQ

Frequently asked questions.

Yes. Our Berlin projects include Brasserie le Paris on Kurfürstendamm and a hotel lobby with a vertical garden. We take on concept, interior design and bespoke pieces, and site management if you wish.
Yes. We run our own projects and plans by other offices, including restaurants and hotels. The prerequisite is a set of execution drawings that can be tendered cleanly. If it is missing, we complete it.
If the use changes, for example a shop becomes a restaurant, or if load-bearing parts or the façade are affected, a procedure is usually required. We check whether it can be approved beforehand and file the application in Berlin ourselves. What changed in the deadlines in 2026 is explained in Building permit Berlin 2026.
As early as possible, ideally before a lease is signed. At that point we can still check whether the space can be approved for the planned use. Bespoke pieces and made-to-order upholstery also need lead time, and that belongs in the opening date.
Yes, our second studio is in Palma. Our hotel and restaurant references so far are in Berlin. What we take on on the island is described on Hotels and restaurants on Mallorca.
